Les Miles Reveals What He Eats For Lunch Each Day At Kansas

As the new head coach at Kansas, Les Miles is faced with the arduous task of turning around what has been the worst Power 5 program in the country. The Jayhawks haven't had a winning season in a decade.

At 65 years of age and after being out of coaching two years, Miles might seem like a curious choice for KU. Sure, he has the coaching resume, but does he have the necessary approach and energy to take on such a rebuild?

Well, it seems like he might, according to a new Sports Illustrated profile about Miles. According to the piece, written by Ross Dellenger, Miles is now vegan, although he considers himself "flexitarian" and has thrown himself fully into his new job.

He also has a daily lunch routine figured out. Every day, Miles eats "a meatless Chipotle salad bowl layered with corn, pinto beans and the soy bean product sofritas, with guacamole and hot salsa on the side."

You know, usually when someone eats Chipotle every day, twice a day at that, they aren't doing so while trying to stay healthy. Miles seems to have the system beat though.

As for his recruiting efforts, "The Mad Hatter" signed away a four-star defensive end from Texas Tech and Nebraska. He's also made good use of the JUCO ranks.

Not a bad start at his new spot.
